The restaurant’s name and its french inspiration comes from the historic french Chef François Pierre de La Varenne (1615-1678), author of the book Le Cousinier François, still used as a reference by Chefs de Cuisine around the world. La Varenne was responsible for the meals of french king Louis XIV and revolutionized 17th century cuisine by innovating and describing culinary experiments practiced until today, such as reductions of sauces, soufflés and cooking. The cuisine of the Middle Ages leaves the scene to give way to lighter cuisine, with more natural flavors, the use of spices and new vegetables such as artichokes. The Chef was responsible for separating savory and sweet meals. Before that, in the same dish or at the same stage of the meal, sweet and savory were served together, different from how we use it today: starter, main course and dessert.
